A ZRC Untraditional Christmas: Trout Curing Masterclass
Monday, 20th December – 4pm
Fill your Christmas table with treats made by your very own hands. In this workshop, we will be curing ChalkStream trout, a more sustainable option than salmon, using botanicals grown at Birch. We will then salt the fish and leave to cure for 5 days, just in time for the big day feasting.
We will also make dill pickles, the perfect accompaniment to your trout.
£60 / person (take home enough trout for 4-6 people as a starter)
£120 / person (take home a side of trout enough for 10-12 as a starter)
